Inside of the mamey. I cut it like an avocado. The flesh is creamy and has texture like an avocado also, but the taste is hard to describe, a mixture of sweet potato, pumpkin, and squash. I like that it's not very sweet but creamy. Already thinking what I can do with it, maybe filling for a pie!
