In Italy we learned cappuccino in the morning espresso in the evening. In Peru we learned ceviche in the afternoon never in the evening. Ceviche consists of raw fish, onions, spices and lemon juice. It's caught in the evening, sold at market in the morning and prepared fresh for lunch. It was so good I'm opening a ceviche restaurant when I get back to the states.
