While observing a bidder examines the tuna on one end, the auctioneer holds a loud monotonous ‘hmmm’ across the hall. Chimes of cow bells mark the start of auctioning. Everyone’s attention is diverted to the auctioneer standing out from the crowd on a stool. Looking enthusiastic and actively involved, the auctioneer is keen on selling the tuna lot for maximum profit.

Young and old come together to preserve the tradition of tuna auctioning that has been passed down for 20 generations. Bidders use a Japanese tekagi hook to prod the tuna, slicing the tail portion off to check its quality. Slivers of flesh are illuminated beneath a flashlight discerning subtle distinctions in fat content and color, both key selling points that dictate the price of a premium tuna ranging from $6,500 up to $11,000.

The enthusiasm shown by the auctioneer creates an encouraging atmosphere for bidders to participate. While the session is ongoing, one bidder’s attention is not completely diverted away from the tunas. Determined to win his desired lot, he keeps his hand up while others examine the remaining lots behind.
