A simple and healty recipe, conceived in a emergency moment and since then entered in my culinary identity: every time I cook it I remember all the markets around the world where I discovered the different ingredients

This dish became my most common way to thank my hosts when I travel around the world. I believe I already cooked it in more than 20 countries!

Food can open your mind! Before trying it, my traditionalist Italian mother feared the avocado with spaghetti, some conservative Indian friends had doubts about masala curry with pasta, some Mexican buddies claimed this is just macaroni with guacamole, and a couple of Persian friends where not sure about the use of pistachio beyond pastry (which Sicilians know well, instead). After tasting it, they all loved it. And asked one more serving.
