Home Made Sausages on the Mountain

So living in the most Muslim part of the world makes you miss the simple things in life – pork sausages. And not the cheap kind, good butcher sausages or in my case the Costco Butcher sausages. There is nothing better than having a good sausage grilled to perfection on the grill. But that is not the case on the mountain, unless you know a Aussie who can grind the meat you want, got the flavourings to add and the skins to make a mean ass sausage. And just our luck we sure do. So with my meat shopping list of 9kg of meat in hand we are heading to Russell and Kerry’s house to make a very large batch of sausages with your friends. Nothing better for a Saturday afternoon than chilling out with the ladies while Gobey gets his hands busy with sausage meat. Once everything is mixed, seasoned and ready for stuffing – you have to try the meat, of course and with a regular batch and a spice batch you need to make sure. And I don’t need to brag but DAMM these are good snags. And being home made just make them ever better. 5kg later and we have enough sausages to last to the end of the year. Now we just need to pull the grill out, get some friends round and enjoy the best, in the jungle.
