Scallions cultivated in the Andes at 12000 feet. Scallions are a critical part of the ingredients. In the highlands of Berlin, Santander, this recently unrooted ones are ready to become a part of a toothsome Mute soup.

Typical landscape in the highlands of Santander, Colombia. With mountain ranges towering 14,000 feet, the inhabitants of the Santanderes have learned how to adapt to the diffucult geography of the region. Notwithsatanding this considerable altitude, roots and other tubercles have been harvested here for centuries.
