Is there anything that sounds as delicious as spinach pie?  It is the PERFECT breakfast food.  Or lunch.  Or snack.  Or dinner.  I'm talking about spanekopita and every bakery does it differently.  It consists of layers of phyllo laced with rich olive oil wrapped around spinach and feta (no, I don't pick out the feta)!  It is typically served warm and I have even had it in the shape of a pretzel!  Another common food here is boiled spinach with a drizzle of olive oil and a lemon to squeeze over it all.  Delicious!

How I wish I could taste Greek food by the side of the mediterranean sea... there is something to food prepared locally... the water, the sun, the local winds, they all seem to impart a different flavor to things... Now I have to go eat Greek. I will go with my husband to have greek this week and we will toast to your health...
