Caption: This picture shows a young woman cutting open a coconut that she would pass off to be shaved in a machine behind her. We witnessed the entire process and them purchased a bag of the freshest coconut you could possibly get. Freshness is not compromised in Indonesia for convenience. We used this fresh coconut to make our own coconut milk, which we used, for our Mangut Ikan as well as to steam rice in for a traditional coconut rice dish.
