In my opinion, Belize's West Indian influence has done nothing but good for the otherwise monotonous food of many CA countries. Here, I eat some really nicely spiced chicken in the pouring rain one night in Hopkins, a Garifuna beach town on Belize's central coast.

This little fella was one of 4 sons and their father, collaborating in a musical family performance, of great precision and thankfully, also having fun.

El Salvador's version of a shrimp cocktail- served at the food festival in Joyoa, a central mountain town- more lemon based than some i've tried and loved by the San Salvadorians, who can easily drive the short distance across the country on their weekends.
