Vegetarian Experience

Passport & Plate - Soya cutlets

Ingredients
Dried soya mince 1 2/3 cup
Hot water or stock 2 2/3 cup
Onion 1
Carrots 2
Courgette 1
Eggs 2
Flour / a few tablespoons
Salt+pepper
Red chilli flakes
Curry powder
Smoked paprika

 

How to prepare this recipe
Soak the soya mince in the hot water or stock
Finely chop the onion, grate the carrots and the courgette
Fry the onion and the spices for two minutes
Add carrots and courgette and fry until soft
Mix the veggies with the soaked soya mince
Add eggs, one at a time and mix well
Add some flour and mix well
Heat some olive oil in a frying pan
Spoon the soya mixture into the pan and fry until golden brown, then flip

 

The story behind this recipe
I recently became vegetarian and wanted to experiment with new things, so I bought a bag of soya mince and wasn't sure what to do with it, so I experimented and tried out a few different recipes and this one was my favourite. I remember my mum making something simmilar out of oats when I was little so I just improvised and created another recipe using soya
