How to prepare this recipe
Braise the vegetables
Boil the beans
Let the the vegetables soak in lemon
Rock salt with beans cool over night
Flash heat in the oven to serve

I was in a small town called Chania, on the island of Crete in Greece, August 2013, it was a magical time.
I hadnt eaten all day and I am also usually eating a pescaterian diet (fish and vegetables).
I stumbled upon this little home that I wasnt sure was a restauarant at first but the hand written signs said BIO SLOW FOOD in big letters, this was amazing typographically.
I was so intrigued I went inside, felt like I was in a grandfathers home, and this white bearded smiley man came out with fresh cretian bread, greeted me with a hug and offered me some of the fresh bread to taste. Asked if I liked vegetables and I said yes, he insisted I sit down and shared the whole menu and how much he loves preparing food for people. How much care he puts into everything and how this actually changes the taste of the food.

One of the most memorable culinary experiences, and the food was delicious and fresh!
