Passport & Plate - Fosforera Margariteña

Ingredients
Fish broth 3 cups
2 onions
Ciboulette
Leek
Garlic
1 red pepper
1/2 can of peeled tomatoes liquefied
6 ají dulce (sweet ají)
1 tsp of pepper flakes
1 cup of white wine or cava
olive oil
1 tsp of butter
500 grams of shrimps
500 grams of squid
200 grams of mussels
100 grams of clams
crabs
Salt and black pepper

 

How to prepare this recipe
Cut and saute onions, ciboulette, leek and garlic on oil and butter, after 3 minutes, add the pepper, ají dulce, and the flakes (all previouly cut on brunoise).
After 5 minutes, ad the tomatoes, and the wine.
Ad shrimps and squid
Incorporate the broth (as needed)
Ad mussels, clams and crabs.
Cook for another 10 minutes.
Use salt and pepper in every layer of the plate and taste it

 

The story behind this recipe
This is a recipe from Margarita island in Venezuela. Fishermans wifes added tomato and seafood to a regular soup and made it amazing. To get there, you have to make a road trip and take the ferry boat, once you get there after long hours driving and been tired, you can get this soup in every corner and hotel avaiable in the island, they give you this soup called Fosforera because of all the phosphorus in it from the seafood ingredients. You feel brand new after this plate and ready to party and move on.
This soup runs into my family vains and tradition, that is why i decided to make it for the first time while ago when I was living in Buenos Aires, because i missed my family and country, i made it in a little kitchen, it was hard to find the tropical ingredients and took many hours to finish it.
Venezuela is a place of history, a mixture of races, culture and food, and its a pleasure for me taking road trips with friends and being able to stop and stunish ourselves by this incredible plates.
