Passport & Plate - Fish fillet with avocados and dried tomatoes sauce

Ingredients
Ingredients for two portions:
300 grams of salmon fillet (can be any fish fillet, cod for example)
1 avocado
5 sun-dried tomatoes preserved in olive oil
2 teaspoons of capers
1 lemon or lemon juice
Olive oil
How to prepare this recipeCooking Instructions:
Peel and pit the avocados. Sprinkle the avocados with a bit of lemon juice, so the flesh will not oxidize. Chop dried tomatoes. Put chopped avocados and dried tomatoes to a bowl. Add capers. Mix with a spoon.
Note. You can put the avocados and dried tomato in a blender and make a pure. Then add capers and mix with a spoon.
Heat a pan. Add a bit of olive oil to it. Place pieces of fish fillet. Brown them on both sides. Turn the heat down, cover and let fry until they are done.
Note. You can cook the fish in a steam cooker or in an oven if you want.
Serve immediately, garnished with mush potatoes or rice.

The story behind this recipeThis is my favorite fish recipe. I discovered this dish in the Netherland. It has a taste of the sea and sun. It can be prepared very quickly and people like it.
We decided to go to the Netherland by chance. It was a kind of adventure since this country was never in my trip list for holidays or cuisine exploration. But now I can say it was one of the best trips of my life in terms of learning a new culture and getting inspired by sea, tulips, dunes and cuisine. At the time was a very long winter. It was already almost April, but it was still grey and rainy. One of these days, I thought I already need a spring. Where could I find it? What I was associated spring? Tulips. I needed fields of tulips. So we decided to go to the Netherlands looking for a spring. And we found it! We were running by tandem bike and exploring tulips, hyacinths and narcissus fields. We saw windmills, blue water and dunes. It was the most colorful and romantic roads in my life. We met painters drawing from nature, riders on horseback walking along the sea cost, women picking flowers. One day we stopped at a café for a lunch. I didn’t know Dutch cuisine, but I thought that the fish should be good because of the proximity of the sea. It was delicious! Especially the sauce matched perfectly with fish. The sauce ingredients were chopped, so we guessed how to do it. It was this sauce with avocados and sun-dried tomatoes with a touch of capers. We couldn’t believe how simple the idea was and how tasty this dish was. We were very impressed with this culinary discovery. Now I make it often especially if I have unexpected guests. Each time when I cook it I remember our Dutch adventure running on bikes around tulips fields.
