Tomato Sauce

• 4 cans - plum tomatoes (794mL)
• 2 – garlic cloves
• 2 large - carrots
• 1 medium – onion
• 1 stick - celery
• 2 leaves of fresh basil
• Salt and pepper to taste
• Olive oil

Strain tomatoes and reserve liquid, peal carrots, celery and garlic
Blend or finely chop veggies, then soften in pot with olive oil
Once veggies are softened add tomato liquid and fresh basil
Season to taste with salt and pepper

Cavatelli Pasta Dough

500 grams – ricotta cheese
500 grams – all purpose flour
3 – egg yolks


1. Mix together egg yolks with ricotta cheese
2. Spread a thin layer of egg yolks with ricotta on a table, then blend flour in with a bench scraper
3. Let dough rest for at least an hour
4. Roll rested dough into thin tubes, cut tubes into small pillow like cubes. Use two fingers to roll cubes into hot dog bun like shapes

Please note, all ingredients should be blended with bench scraper until fine crumbs are created. At this point use hands and combine dough until fully mixed.
