Passport & Plate - Serbian cheese pie

Ingredients
- light white cheese 500g - 800g
- 1 package of thin pie crusts
- 5 eggs
- 1 backing powder
- 2 dl of oil
- 1 cup of yogurt
-1 cup of sparkling water
- a teaspoon of salt
How to prepare this recipeTake a bowl and put the eggs and white cheese and stir. Slowly keep adding the sparkling mineral water, oil, backing powder and salt (choose the amount of salt depending on how salty the cheese is), then add yogurt.
Put a little bit of oil on the bottom of the baking pan and put 2 crusts to cover the entire bottom. The edges might be pointing out of the pan, don't worry about that now. Leave one crust aside to cover the pie. Now take your stuffing using a spoon an put a few spoons of the stuffing on the crusts you have just put in the pan. Take the other crusts, lay them over one by one and put a few spoons of stuffing on each crust. You will get crust-filling-crust-filling. They do not need to be perfectly laid down, you can squeeze them with your hands a bit so that you do not get edges pointing out of the pan. Do this until you have no more stuffing and crusts.
Just fold down the edges which are pointing out of the pan. Now use the crust which you left aside and cover the entire pie. Spray that last crust with some oil and sparkling mineral water and bake for 40 minutes at 200 degrees.
Leave it for a few minutes to cool and enjoy with a glass of yogurt. :)

Both of my grandmothers used to make this pie, now my mother does so, and recently I have started to bake it. My sister and I used to wake up with the scents of the cheese pie. As you can see on the photo, it is the best when prepared in a traditional wooden stove. This is made on the countryside and I used our own eggs and milk. That is how one can get the true taste! Nothing better than waking up in the morning and having this pie and a glass of yogurt for breakfast with all family members sitting together. We used to take a few pieces of pie with us to school for snacks, then on short trips in case we got hungry, and my mother still packs a full bowl of pie to take with me whenever I leave home. I used to eat it as a child and I will eat it when I become old. The recipe is usually passed down from one generation to another, and different regions have their versions, of course each region feels theirs is the best! :)
