Passport & Plate - Seviyan

Ingredients
- 150 g seviyan
- 30 g butter
- 3 green cardamom pods
- 2 cups (500 ml) milk
- 4 tbsp sugar - more or less depending on your preference
- chopped up almonds and pistachio

 

How to prepare this recipe
1. Put Stove on Medium Heat
2. Place butter in pot and let it melt
3. Place cardamom pods in butter - mix and wait 1 minute
4. Put seviyan (break in half) in pot for approx. 5-7 min or until they are golden brown
5. Put milk for 2 mins
5. Add sugar and continue to stir
6. Stir until it becomes thick (not extremely thick)
7. Turn stove off and put it in a dish
8. Decorate with chopped up almonds and pistaschios

* two ways to eat this dish - hot or cold - depends on your preference. If you like it cold, once it cools down - place in fridge.

 

The story behind this recipe
This dish plays a big part in our family and how it brings us all together every year. From as long as I could actually remember anything, this dish has been in our family since then. Anytime there was a joyous occasion or special guests visiting - my mom would make this dish for them. It was like our delicacy. It was only made on special occasions. The one main occasion that would guarantee us this delicious this was Eid. Every morning, before Eid prayers, we would wake up at 6 am, brush our teeth and sit on the table as a family. My mom would then serve us seviyan for breakfast and we would finish it within minutes - never any leftover. We would actually complain if one of us got more then the other. This dish brought our family together every Eid and has so many memories in our family. Till this day, my mom and us sisters are all in different parts of the world but every Eid, we will all make this dish and skype each other. We may be a part from one another but this dish links us together. Seviyan isn't just a well known dish in our family but I am pretty sure is a part of every pakistani family. It is a very simple dish to make yet it carries so much weight to us.
