Passport & Plate - Malabar Nightshade with pineapple tidbits

Ingredients
Alugbati leaves
2 Tomatoes, sliced
1 can Pineapple tidbits (reserve the syrup)
1/3 cup raisins
¼ cup peanuts, chopped
Dressing:
1 tbsp balsamic vinegar
a squeeze of local lemon called calamansi
Syrup from the can of pineapple tidbits
Freshly ground pepper
Salt (if you will)
How to prepare this recipe1. Steam the malabar nightshade (alugbati) leaves for about 3 minutes, blanche afterwards. (you’ll have to separate the leaves which have stuck together while being steamed).
2. In a bowl mix the Malabar nightshade, tomatoes, pineapple, raisins and peanuts.
3. For the dressing, combine the balsamic vinegar, calamansi juice, pineapple syrup, and salt and pepper.

This recipe is special to me because this is one of the dishes that I have prepared myself that I think I have prepared well and tasted really good. As a bonus, my facebook friends liked it when I posted it on facebook.

Most people don’t like Malabar nightshade but this recipe is a winner. I found this recipe through the internet when I was browsing for new recipes to try. I thought that this is a unique take on the Malabar nightshade. I was not disappointed, it tasted really good!
Why should you send me to Italy? The answer is simple because I’m trying to learn how to cook and I am a foodie! I like tasting new dishes from different provinces of my country, the Philippines. I like to try eating in different restaurants. The ambiance is always different. I love breads, bakeshops. I have this childhood dream to have my own bakery someday. But such dream has now evolved; I want it to be a bakery café. I will call it Que Cafe or Pecha Kucha Café.
