A Creole/Spanish take on an American Favorite

About foodscapevpm

Hi there! I'm Michaell. One year ago, I made the decision to stop eating processed foods. My challenge: my husband is such a picky eater that he would win against a 2 year old. Since many of my friends come to me for recipes on how to eat nutrient-rich foods, while still eating what they like, I decided to start a food blog - Foodscape. I turn family favorite recipes into vegetarian and vegan-friendly foods.

Although I have only been outside the US and Canada once when I spent a summer studying art in Italy, I have a passion for international food. I love Moraccan food for the mint tea, couscous and eating on the floor. Asian food for introducing me to the many varieties of rice and love of wasabi. Indian food for teaching me that pureed vegetables make the greatest sauce, Israeli salad, and Italian olive oil, wine, and gnocchi. Without world food, life would be quite boring. So next time your friend invites you for injera and Ethiopian food, take a chance and experience the heavenly flavors from afar!
