Passport & Plate - The Stewed Eggplants

Ingredients
You need:
- 2-4 Eggplants
- 5-7 Tomatoes
- Flour
- 50-100 g of Cheese
- Salt
- Vegetable Oil
- Oregano, or other spice to your taste
- Tomato paste or Ketchup to your taste
- Cooked potatoes, rice, pasta or any other garnish (optional)
How to prepare this recipe1. Dice eggplants and chop tomatoes.
2. Roll diced eggplants and chopped tomatoes in flour.
3. Put eggplants and tomatoes onto the warmed-over pan, a little bit oiled in advance.
4. Add salt and some spice to your taste.
5. Mix eggplants and tomatoes. Stew for about 15 min on low heat, stirring every 3-4 min.
6. When the vegetables turn into a smooth mass, add grated cheese. Do not mix. Let it stew for about 3-5 min more.
7. Well, the Stewed Eggplants are ready. You can serve it up as the separate dish or with the garnish or add some tomato paste to your taste.

Once upon a time there lived one little girl (hint: that was me), who completely refused to eat anything. The girl’s poor mother was following her trying to feed her with something. But the girl was almost invincible. Of course, sometimes the mother turned out well to feed the daughter, but with a scandal. They say that kids often don’t eat much, that they are capricious, but this girl was the crankiest of all. The doctors even diagnosed her dystrophy (haha - could you believe it looking at my photos now?). Most of all the girl hated vegetables. All of them. Completely.
The days passed and one day already the teenage-girl’s best friend invited her to spend a week of summer vacations at her summer house. The friend’s aunt, who lived nearby, invited the girls for a dinner. She adored cooking and always made a lot of interesting and exotic courses. And that evening wasn’t exception.
The aunt prepared for that dinner a lot of courses, the main of them was stewed eggplants. That was rather exraordinary meal for the region where the girls lived (the North-Western part of Russia). Eggplants can’t compare with potatoes in popularity.
So, our girl was shocked, she thought she was unable to eat that. But it was very impolite to refuse. And… Oh, miracle! It was delicious!!! The girl liked this meal, since then fell in love with food and they (me and food) lived happily ever after. The End.
