Only hundred years ago some sailors managed to "steal" the secrets of how to have "moeche" (Venetian name given to the crab the moment after it loses its armor and before it builds up a new one). Before then this was a secret jealously kept by the "moecanti" of Chioggia: they were keeping the crabs ready to change armor in these containers, called "vieri", waiting to catch the moment when the young crab becomes moeca to sell it as a delicacy.
