Passport & Plate - Chicken lavangi (Stuffed and baked chicken)

Ingredients
Ingredients:
Chicken 1 pcs

For the stuffing:
1. Onion 1pcs
2. Wallnut 200 gr
3. Yellow Raisin 100 gr
4. sour paste* 1 tablespoon
or 5-6 large dried sour plums, pitted and chopped
5. Salt and Pepper
6. Vegetable oil 50gr

 

How to prepare this recipe
How to make a Sour Paste
1. Take sour plums.
2. Take out the seeds.
3. Boil this plums with little water and salt

How to make Lavangi
1. Rub inside and out of the chicken with salt, pepper and half of the sour paste.
2. Chop the onion, then fry it in oil.
3. Grind fried onion, wallnut, raisin.
4. In a mixing bowl mix grinded ingredients with sour paste
5. Preheat the oven to 180o C
6. Fill the stuffing into the chicken
* if necessary pin chicken with wooden barbecue skewers or cocktail sticks.
7. Bake the chicken
8. Garnish with lemon slices, pomegranate seeds and serve with rice pilaff or bread

 

The story behind this recipe
It was my 23rd birthday. I was in Army (In my country everybody should go to army for 1 year after uiversity) and listening to Three doors down - Here without you. Away 500 km from home and still 8 months are remaining. And suddenly someone called my surname.
-Mirzazada, someone is waiting for you at gates.
I was surprised. Who could it be? At 11 pm.
I went to gates. There was a man waiting for me.
- Are you Miryusif?
- Yes
- This package is for you.

It was a gift box - surprise from my parents. They have sent me a birthday present. What is the best present for soldier? Of course house meal! Directly from my mothers hand! And who knows me better than anybody (At least my taste :D ) Of course my mum! She has sent me a CHICKEN LAVANGI and pickled cucember and some other things.

I was so touched. It was my best birthday, and i think it will be the best. That evening we sat with friends and ate our birthday meal, and dreaming about civil (non-military) life, which was waiting for us after 8 month
