the secret ingredient is FD and C YELLOW #5, not tumeric. they sprinkle little packets of it into their clay tagine pots,after frying the vegetables in lamb stock and chicken fat. first the oils, then the onions and spices,the colors and stocks,and then potatoes and carrots and canned peas. i get to see it all simmer together,smelling exotic and now familiar. and then i humbly an graciously accept this nourishment, delivered to me upon a utensil of white bread and washed down with a cupfull of refined sugar dissolved in a brew of tepid water and wilting mint leaves. hahm du lila!!!
