Ingredients
3 cups Flour
1 1/2 Cup Warm Water
3 teaspoons yeast
Pinch Salt
4 tablespoons sugar
Oil (for deep frying)
How to prepare this recipeMix Flour, Sugar and Salt in a bowl and whisk together. In another bowl mix the water with the yeast and stir and add to the dry mixture and mix well. Cover the dough and leave for an hour to allow it to rise. Knead and then deep fry in oil.
The story behind this recipeWhen i was a little kid, we went to the village to visit my Grannny (late Abitit Chipande MHSRIP) alot, almost every school holiday was spent with her and she lived 4 hours from where we were staying but the drive there was totally worth it. Behind her house was an old lady that made mandazi every morning before sunrise and every evening after sunset for the locals to have for breakfast, and my granny never understood why we would ask for money at the exact same time everyday n never complained about just having porridge for breakfast, it was the old ladies MANDAZI, they were nice and soft and always hot and they would never make it home cause i'd start eating them from her house and by the time i get to my grannies they would be finished. And growing up i told myself i'd learn how to make mandazi so my children can be able to experience the taste too. I have them as a snack, for breakfast, dessert, i could eat them all day long.
