USA | Friday, February 27, 2015 | 3 photos

Ingredients
1 can of sweetened condensed milk
1 can of evaporated milk
1 tub of cool whip, softened
1/4 cup heavy cream
1/2 cup cottage cheese
1/4 cup sugar
couple pinches of saffron
crushed pistachios, to taste
popsicle molds, or small paper cups
popsicle sticks

How to prepare this recipe
Combine all ingredients except cool whip in a blender and mix until blended well together.

Pour into a bowl and fold in the cool whip.

Pour into your molds and freeze for at least 6 hours.

Halfway through, add the popsicle sticks.

If the kulfi does not come out immediately, run a little warm water over the molds. If you use paper cups, just rub them between the palms of your hands.

The story behind this recipe
I spent three months in India a few years ago. I love traveling and I love Indian culture. I was there during the summer, so the heat was intense. I have very fond memories of going to cafes or ice cream stands and getting kulfis to cool down from the heat.

I loved them so much, that I decided to recreate them. Although they aren't perfect, they are delicious and remind me of India.
