Passport & Plate - Aurat and rosemary: smells of Morocco

Ingredients
(for three person)
- three medium-sized whole fish
- three big carrots
- one bunch fresh rosemary (jusr gathered in the park)
- one stick butter
- one lemon

 

How to prepare this recipe
At first make a cut along the bottom of the fish and remove the intestines and entrails.
Cut the butter into middle-sized cubes (you will need 5 chunks pro portion) and put them on the foil.
Now grate the carrots on the medium blade of your grater and fill the fish cavity with carrots.
Put the fish on the butter cubes, add some salt and sprigs of rosemary, wrap the whole fish in the foil and put it into the oven for 20 minutes.
Could be served with a squeeze of lemon juice and season vegetables.

 

The story behind this recipe
Imagine, that you are coming close to the Sahara desert in the small and jerky bus. There are 20 passenger seats and forty people. The luckiest of them are sharing one seat with the neighbor, but if you are not Moroccan, dont know the driver personally and you have bought the ticket later as the week before your trip, you will get your place on the floor.
These, who know these things before, have pillows and blankets with, now they can just lie on the floor and it seems to look rather comfortable. Morocco, summer, 48 degrees outside, jam-packed bus and six more hours to your destination.
Suddenly the bus jerks and stops. Broken? But voices are rather glad... Wow, we are going to have a break, the whole hour long. You are scrambling out to stretch out the muscles and there...the air is filled with small splashes and streaks of smoke; its a cafe in the waterfall, inside; and a grimy man performs some kind of food-magic and speaks in this unusual arabic English: "Try! Aurat. Moroccan fish".
Of course, later I will talk to him and make photos, I will ask about the recipe (its terribly easy, easnt it?), but at the moment Im just sitting in the middle of the waterfall with a piece of delicious fish on my plate, and Im the happiest person in the world
