Passport & Plate - Bragjoli- Braised Beef Olives


Ingredients
Bragjoli:-
1 or 2 slices of thinly sliced beef knuckle
2-3 slices Parma ham
Few leaves of baby spinach
1tsp Dijon mustard
1 portobello mushroom -sliced
1 hard boiled egg
1 tsp chopped parsley
1 tsp grated Parmesan cheese
Splash of wine to deglaze pan
1 roughly chopped carrot
1 roughly chopped onion
100 - 200 mls veal or chicken stock
1 bay leaf
6 peppercorns
2 sprigs of thyme
2 cloves of garlic
3 -5 sage leaves

Rocket & Roasted Tomatoes Salad:-
100 grms halved cherry tomatoes
2 cloves of garlic
2-3 sprigs of thyme
1 tbsp olive oil
Pinch of salt
Rocket leaves
(A small handful of Garlic shoots or some micro herbs)

White Bean Purée:-
200 grms cannellini beans ( soaked in water overnight)
40 grms butter
1 tbsp chopped rosemary
50 mls chicken or veg stock
Pinch of salt
Pinch of white pepper
1 tsp lemon zest
1 tsp creme France
1/4 tsp white wine vinegar
2 cloves of garlic ( if tomatoes are prepared before use the roasted garlic cloves)
