The story behind this recipe
This beauty recipe goes back 90 years. To my Grandma who grew up in a small village called Maritsa on the island of Rhodes, Greece.
An idillic island in the Med, my Grandma, as legend has it, made the best pastitsio in the village. She had 7 children, my Grandma.
And I was lucky enough to be the son of the woman who carried on the tradition of making the best pastitsio in the family.
My Mother is the last of 7 kids and as it turned out, had the closest connection with her Mother. That being said, she got up early to help and went to bed last to help. In that time, she studied, learned and honed how to make many things…but the pastitsio is by far her favourite and best creation each time. She can make this dish for meat lovers and veggie lovers…very versatile.
The key is to use organic ingredients, measure only by memory and tradition and expect the best every time.
For generations, this recipe has made many people happy.
The issue now is to continue the legacy! :)
