Passport & Plate - Khinkali - Meat Dumplings

Ingredients
Dough:

250 grams minced meat 4 cups flour
3 onions 1,5 cups water
bundle of fresh coriander touch of salt
bundle of fresh parsley glass with thin rim
black pepper (in peppermill)
1 teaspoon ground caraway seeds
1/2 teaspoon red pepper
cup of water
salt

 

How to prepare this recipe
We should peel the onions and chop them. Then we clean the fresh coriander and parsley chop them as well. We mix the onion and herbs together and add the caraway seeds, pepper, salt and water. We put the minced meat in a bowl and add the mixture. Then we clean a workspace and make sure it is dry. Dust it generously with flour. Pour the flour onto the workspace and add salt. Make a pile with a hole in the middle. Then we slowly add the water into the hole and knead to make the dough.Then we should add an egg to make the dough more smooth and easier to handle. We make a large, thin slab of dough using a rolling-pin. we use the glass (upside down) to cut the dough into small rounds. Then we use the rolling-pin again and make each round larger and thinner. We put some stuffing on each round. Now we fold them into dumplings by picking up the outside bit by bit and folding each bit to the previous one something like a curtain.The round dumpling should be closed and has to have a thick dough part at the top like a handle. We should fill a large cooking pot with water and bring it to boil. When the water is ready we place the dumplings in and boil for 15 minutes. When they are ready we take them out of the water using a skimmer and put them on a large plate. We should serve them with black pepper. Bon appetit

 

The story behind this recipe
Khinkali is very famous in Georgia. Sometimes we cook them like 3 times a week. It is very easy to cook but some people prefer buying frozen ones and they only need to be boiled... but I prefer preparing and cooking because it is lot of fun. When I was younger the whole family would gather and start cooking. One was making the dough, the other would slice the onions and other ingredients... we were all so busy. We should put some great music on and do our jobs... when Khinkali was ready we would buy vodka or something like that :) and eat :D I remember once we made about 150 khinkalis... I think that was the highest number we did. Even though it seems to be an easy recipe, trust me it is not and it is veery exhausting.... BUT when it's done - - - - - exhaustion disappears and you just wanna eat... :D
