Cover with broth, ladelled into bowl
Add fish sauce,
Lastly, add as many fragrant herbs, mint & green leafy vegetables you like. On the streets of Hanoi, they put all the herbs on the table for us to help ourselves.
The story behind this recipeLoved sitting on the busy street in Hanoi, on a small child's plastic stool, surrounded by street vendors, people & motorbikes constantly whizzing past & parked everywhere on the street.
I enjoyed this authentic cultural experience for lunch every when I was in Hanoi, then tried to replicate the recipe at home, but without the environment which totally made the experience, so my home cooked version was a very poor substitute. But I'll never forget those days sitting on the plastic stool & taking it all in.
