Ingredients
rice noodles (depends of number of people, for 4 adults 400g are ok)
seafood cocktail (or any seafood. i usually buy cocktail because there are shrimps, octopuses, squids and mussels - everything i like. In Thailand they also add sea scallops - so delicious!! but almost impossible to find in my country :( - for 4 adults around 500-800g)
soy sauce
olive oil
2 eggs
lemon
cashew (50-100g are more than enough)
any musical device that will make you dance. That is so important to sing and dance while cooking. In this way your positive energy will be the secret ingredient :)
How to prepare this recipe:
First of all put the noodles in cold water for 20-30 minutes. During this time it will become softer and ready for roasting.
Thais cook in special skillet called wok but I don't have it, so I cook all the ingredients separately and then combine everything in a large skillet.
So now it's time to prepare ingredients.
Shake up eggs into omelette, roast both sides, cut in thin strips.
Take a pan with thick walls and unfreeze seafood
Move seafood to the skillet in which we will cook, add olive oil, fry for 3-5 minutes.
Then add noodles. Pour a little water, cover with lid and leave for 2-3 minutes
After that add soy sauce, cover with lid, wait a few more minutes.
Add eggs, thinly sliced lemon, cashew, give them a minute or two so the dish got its unique flavor.
Put the finished dish into the plates, pour the lemon juice and a little of soy sauce.
Voila! Enjoy your masterpiece!
The story behind this recipe
Once upon a time a young woman came to Thailand to relax, pull away of all her problems and find herself. Instead she found love and good friends.
One shiny day she came to the monk who tied the magic bracelet on her arm, while she was thinking of a desire:"to find a person who will be perfect for me"
Monk said that the wish come true when the bracelet untied.It suddenly unleashed the next morning.The meeting happened the same evening. It was a love at first sight. And the 3 magic days after.And then he went off to work.
The girl didn't enjoy the parties anymore. So she started just walking around,exploring amazing island and tasting new food,emotions,experiences.
One day she went to find a place where she could sit and work with the sea view.Some time later she found it.Little family restaurant right on the beach.The girl started going there every day and sit till the late evening. In this place everything inspired her to work:food,sea,people.
The owners got used to this young woman and they started talking when there weren't many clients.
The only one thing was different.They made Thai food taste different.
And in her last day she dare to ask. It turned out that the mother of the owner was chinese. And they added soy sauce to their dishes.
After coming back home the girl had no wish to cook this because of the feeling that she'll screw up her beautiful memories with cooking this.But then she tried.That was amazing.Easy, clean, tasty.In those rare moments she was swimming in the ocean of memories. She danced, she was making plans, she dreamed about this unbelievable future.
All ended in one moment. He wrote just one message: "I can't. Sorry I can't do this anymore."
You know, I'm afraid to come back to Thailand. I'm afraid that all the memories I had there will flood back into me and instead of having a great vacation I'll just sit in the same restaurant on the beach, eat Thai-chinese food and dream about things that will never come back...
