Passport & Plate - Panini sandwich

Ingredients
1 Panini loaf
Mayonnaise
Lettuce (rinsed & layers separated)
Onion chopped into thin strips
Sliced Tomato
Green pepper chopped into thin strips
White cheddar
Sausages sliced into small pieces
Cooking oil
Herbs & spices (including black pepper)
2 spoons of Tomato paste
Teaspoon of Crushed garlic
Chilly sauce
Tomato sauce.

 

How to prepare this recipe
- Fry your sliced sausages with cooking oil, herbs & spices in a pan over moderate heat for 20 - 30 minutes.
- Drain excess oil out of the pan
- Stir in tomato paste before removing pan from heat.
- Slice the panini open & spread both halves with mayonnaise.
- Lay the lettuce to cover the 1 half of the panini then evenly place 2 slices of Tomato, slices of onion & green pepper.
- Sprinkle black pepper over the vegetables
- Lay sliced cheese on the other half of the panini
- Serve the fried sausages evenly on the bed of vegetables
- Sauce it up with chilly & tomato sauce before closing the sandwich
- Cut the sandwich in half for easy handling
- you can serve with baked sweet potato chips

 

The story behind this recipe
I live in Soweto, a historical township in Johannesburg, South Africa and anyone who grew up there knows that the most convenient fast food on any day is the bunnychow, which is a quarter of a loaf of bread stuffed with French fries, cold meat, mango atchaar and sauces for less than R20.
I got tired of that being my only option then discovered the panini loaf while shopping with my mother. After tasting the bread, I knew why I loved Italian food and a glass of dry red wine. I have never been to Italy but I researched how they used the panini & after experimenting with a few fillings, I decided to open a mobile restaurant in my neighbourhood, to give people a healthier and mouthwatering alternative. Needless to say, the panini became a hit but the business could not survive due to lack of facilities.
My palette responds better to rich, wholesome flavours. The panini was perfectly satisfactory. To suit the South African preferences of my customers, I sold the sandwich with fried hake, grilled chicken including extras such as egg.
