Passport & Plate - Cheese soup

Ingredients:cheese;carrot;potato;lemon;water or clear soup;olive oil;herbs;How to prepare this recipe
Peel the carrots and grate on a fine grater or cut into sticks and fry in olive oil. Then add water or broth when broth boils, add the chopped potatoes. Boil potatoes until it is done. Grate cheese on a fine grater and gradually, stirring, add it to the soup. Then simmer the soup on slow heat, stirring constantly, until cheese is completely dissolved. Taste and add salt and pepper if necessary to taste. Garnish with herbs, lemon and serve with croutons.
* Also rice, noodles or any groat could be added to soup before cheese.*

 

The story behind this recipe
This recipe was created one day by me when I had a lot of cheese and wanteed to make something interesting. Later this soup became very popular over my family due to it taste and sipliness in prepare. Especially my two cousins liked it very much. Unfortunately one of them th youngest is died some days ago while celebrating the International Women's Day; and the doctors didn't help him to survive. He liked this soup so much that asked me to prepare it everytime we met. That is why I applyied for scholarship with this soup. This cheese soup will always remind me about him.
