Andean colombian potatoes are a must for the soup. Colombia boasts a wide variaty of potatoes, of which the papa criolla "creole potato" is the most delicious and ideal for giving Mute soup part of its thick touch.

Scallions cultivated in the Andes at 12000 feet. Scallions are a critical part of the ingredients. In the highlands of Berlin, Santander, this recently unrooted ones are ready to become a part of a toothsome Mute soup.

Ingedients cannot be any fresher! From the guts of the highlands to the table. Most people in Bucaramanga and Cucuta, the largest cities in the Santanderes prefer to drive to the highlands to buy the ingredients directly from the hardworking peasants.
