Ingredients
Ingredients:
1 1/2 pounds of boneless beef short ribs (cut into cubes)
3 turmeric leaves
1 lemongrass (cut into 4-inch length and pounded)
1 cinnamon stick (about 2-inch long)
3 cloves
3 cardamom pods
3 cup thick coconut milk
Salt to taste
Spice Paste:
3.5 oz of red chili peppers
15 onions
6 garlics
1 inch galangal
1 inch ginger
How to prepare this recipeMethod:
Chop the spice paste ingredients and then blend it in a food processor until fine.
Heat the oil in a stew pot, add the spice paste, cinnamon, cloves, and cardamom and stir-fry them until it smells fragrant.
Add the beef, turmeric leaves, and the pounded lemongrass and stir for 1 minute.
Add the coconut milk, water, and simmer on medium heat, stirring frequently until the meat is almost cooked.
Add salt
Lower the heat to low, cover the lid, and simmer for 2-3 hours or until the meat is really tender, the color change to brown and the gravy has dried up.
Serve with some rice.

My name is Mega. I am minangkabaunese and was born in Padang, West Sumatra, Indonesia. Padang is very well known for its mouth-watering food such as dendeng batokok or spicy dry meat and the world most delicious food based on CNN version: RENDANG or caramelized beef curry. Eating rendang has been a tradition in my family. We eat rendang not only on spesial ceremony, but we eat rendang whenever we want! Its delicious taste make very time myself tremble with childlike excitement. Rendang is served with rice. Because Minangkabau food is well known with its spicy taste, my grandmother served rendang with sambalado or spicy sauce made with red chili peppers and with kerupuk or prawn crackers. At the time we eat rendang, it was the time to relish in family warmth, and also jokes. My favorite taste of rendang is my grandmother's one. My grandmother is the best chef in my family. That's why my grandpa felt in love with her. She made rendang like no one can make it best like she did. When I was kid I always watch her cooked every dish and especially rendang! So the recipe of rendang I wrote is the secret recipe from my grandmother. But since she passed away 3 years ago, I am so sad and I always try to make the best rendang like she did. :)
