Passport & Plate - Sicilian Mussels

Ingredients
Red Sauce
Pancetta
Port/ sweet red wine
Garlic
Cream

 

How to prepare this recipe
Firstly, the sau?e:
2 oz italian seasoning
1 cup red sweet wine
1 can pizza sauce
1 table spoon of garlic
1,5 cup parmesan
Oil bottom of the pan when hot add garlic. Be careful, not to burn garlic, it's a very fast sauce!Add wine, sautees for a minute. Add a can of pizza sauce and in 2 minutes parmesan. Cool it and here is it!
Then, Sicilian mussels
1 tblsp. garlic chopped
2 tblsp. pancetta chopped
5 tblsp. red sauce
1/2 cup port/sweet red wine
1 can of mussels
2 teasp. cream
Oil bottom of the pan when hot add garlic. Sautees, add pancetta then wine/port and red sauce. Reduce for couple minutes add mussels and cover the pan. After mussels open - turn off the heat add cream and enjoy perfect mussels!

 

The story behind this recipe
I was going to start with the story. Because without a story there won't be a recipe.
It all started at the JFK international airport in New York City. I landed there and realized I am all by my own in USA. Good-looking, 21 years old student from Russia, interested in politics, international relations, literature and food. My way was to Kelleys Island Ohio. Once i came to this small but, I swear, magic place, I felt in love with it: with people there, with amazing nature, stars, lake and the winery, Well, we are coming closer to the essence. Winery...It is well known all over the island and in the suburbs for its delicious food and home-made wine. Have you ever known, you could find good wine not only in Napa Valley but in a such small island in the heart of lake Erie, not far from Canada. Before last summer, I've never heard about other American wine producers. Anyways, winery has its history. It began nearly 60 years ago from the oldest Zettler. For now it's riled by Kirt Zettler and his family. Wine-making is his passion and winery is his life. There, at the winery, a stranger from absolutely different culture found new friends, became a part of winery crew, tried numerous dishes and drank awesome wine. which was made with love. That was great experience not only in language but in learning how to bake up different dishes. I must say, I've always been interested in food and drinks, working part-time as a waitress only warmed up my interest. And once, Kirt taught me to cook Sicilian Mussels. That is one of his favorite recipe. He brought it from one of his trip to Italy. However, now it's on the menu of the winery and one of the most popular withing islanders. Winery gave me not only pleasure for my stomach, it helped me to find love. Once I made mussels for my future boyfriend, he couldn't resist but was astonished by my skills. Now back here in Russia sometimes I make this Sicilian Mussels and feel this magic of peace-of-heaven island.
