Passport & Plate - Creamed Peas on Toast

Ingredients
1 PKG. Frozen or Fresh Peas
1 Tbl Spoon Unsalted Butter & Extra for Bread
1 Tbl Spoon Flour
1 Cup of Milk
Salt & Pepper to taste
Slices of Bread
How to prepare this recipeTo start place your peas in a pot of boiling salted water. Boil them for 3 min. then remove to a bowl of ice so the peas stop cooking.
In a new pot melt your butter over Med-Heat.
Whisk in your flour. Season with salt and pepper to taste.
Whisk over Med-High heat for approx. 5-7 to make a rouge and to cook out the flour.
Slowly add your milk while still whisking your rouge.
Stirring for approx. 5-7 min. over Med-High heat till you are satisfied with the thickness of your sauce.
Remove from heat and add peas.
At this time toast your bread and spread a healthy portion of butter onto your toast.
Scoop Creamed Peas over toast and Enjoy. Bon Appetit!
The story behind this recipeIt’s another breathtaking day in the Kimberly's of western Australia were I'm working as a Stewy on a private yacht for a young Australian and his guests. The boys had just come in from a lengthy fishing trip and unfortunately the only thing they had to show for the day was a couple empty beer cans. This was the first time there was no daily catch for me to throw on the Barbie.
So now I'm nervous, theres no fish and I have to make lunch for the first time, what should I make them? Will I get fired if I don’t make something gourmet? So I stared into the freezer when my eye caught a bag of frozen peas…you think?? I grabbed the peas and started to make one of my favourite childhood dishes: Creamed Peas on Toast. Was this recipe to simple for hungry men? But all I could think about was how much of a treat this was for me as a chid, it was a recipe that my grandmother made for my mom and she made for us. I know not a lot of kids were excited about peas at a young age let alone green food but I was. It was the simplicity of the dish that was so warming, so comforting, and loving that I felt special every time I took a bite and a little of the cream sauce would drizzle down my arm. The moment of truth arrived,I set the plates down and gave a quick heart felt description of what the dish was an where I learned to make it. I retreated to the kitchen to hide and clean up. Suddenly my boss appeared and announced “That was the best thing he ever ate!” He said it was so simply and delicious and the story behind it was so genuine. Then he asked me to take over all the meal cooking for the rest of the trip. I was flattered and surprised that my little homemade dish had that much of an impact. Goes to show you that if you cook with your heart and soul an keep things simply theres no end to what you can do or who you will impress, even on a boat in the middle of the ocean.
