Passport & Plate - Spinazie Schotel

Ingredients
500g minced beef
1 packet Spniazie a la crème
Instant mash x2 sachet with 800ml boiled water
Mild shredded Gouda cheese
1/4 Japanese soya sauce
1 tablespoon Worcestershire sauce
Salt and pepper
Apple sauce

 

How to prepare this recipe
-First preheat oven to 200 degrees Celsius
-Brown the mince in a non stick fry pan
-Add soya sauce, Worcestershire and a pinch of salt and pepper. Once stirred pour mince into a casserole dish
-Defrost Spinazie in microwave for 3 minutes and add a layer over mince
-Add water to potato mash mix and stir until fluffy (no butter needed)
-Spread potato evenly over the Spinazie and finally cover in the cheese
-Cook in oven on 220 degrees Celsius for half an hour until cheese is crispy
-Serve with Apple sauce

The story behind this recipe
I had been traveling Africa, Europe and The United States for almost a year before I was offered a job in Amsterdam for twelve months. The job is a live in personal assistant position to the creative director of a design label. Sounds pretty easy right?
Well a big part of the reason why I got this job was because I LOVE FOOD and LOVE to cook. So my boss asked me to cook on week nights for her and her family. "Sure, peace of cake" I thought. Everyone loves my cooking. Or so I thought...
The biggest challenge I faced in the few first few weeks was getting a Dutch family used to my gourmet menu. (In case you don't know, the Dutch just LOVE meat, cheese and potatoes for the most part) I tried a few different meals and you can only imagine the look on my face when my boss' two sons, eight and seven and her daughter, two, absolutely hated my cooking! I was distraught. The children would make themselves cheese sandwiches instead of eating the prosciutto tortellini I had poured my heart and soul into all afternoon.
Then I was introduced to SPINAZIE SCHOTEL. (Pronounced Spinazie Scrawtel) Did you just repeat it out loud? I don't blame you.
This dish is an absolute winner! From a travellers viewpoint this is a quick, easy and cheap meal for anyone on a budget and as an Aussie it's just like a shepherds pie. I love watching the kids faces when I pour tomato sauce on mine while they are dousing theirs with apple sauce. They think I'm the strangest person to ever have walked this earth.
So there you go. A Classic Dutch meal, a family favourite and a travelers dream. You just can't beat that!
The Dutch go wild for it. And I love the way the Gouda cheese becomes crispier with heat. The textures are amazing together.
Did I mention my boyfriend is Dutch? For anyone who dates a Dutchie, wow them with this! They will probably marry you.
