Ingredients
200 grams of butter
2 eggs
salt pinch
2 glasses of flour
0,5 bags of yeast (about 5-6 grams)
0,5 glasses of granulated sugar
No milk! No water!

 

How to prepare this recipe
First of all it is necessary to maintain warm temperature in kitchen, to close windows, to avoid drafts, and to include a plate. We take the necessary quantity of yeast and pour it in a cup, we can also add a half - teaspoon of sugar. We add warm water, about a half-cup, and we put it near a ring. In 5 minutes the risen yeast can be removed. Meanwhile we take butter. If it is taken out from the fridge, it is necessary to warm it and maybe to kindle a little. We put flour in a bowl, spread butter, add two eggs, and a salt pinch, as soon as yeast is ready we add it too and finally we knead dough. We put a bowl with dough near the switched on rings, cover it with a towel and leave for 30-40 minutes. The dough has to rise, it will be a little buttery and it is a good sign! ), we add sugar in the dough, knead, and leave it again for 20-30 minutes. At this time it is possible to prepare a stuffing for every taste: prunes, dried apricots, buttered condensed milk, apples, cottage cheese with raisin, chocolate. We take the risen dough, divide it into two equals, then we roll it in a round or rectangular shape and one part we spread on the baking sheet oiled with the butter. From above we put the stuffing (if it’s from fruit, is better to add starch that it will not flow out), and we cover the pie with the second layer. The edges need to be fastened and it is possible to bend them inside. We take a small slice of warm butter and a little flour (somewhere about a fist) and the same quantity of sugar, and we wipe all 3 ingredients through fingers. Then we douse hands with water, grease the top layer of pie and strew it with the resulted lumps. The pie is pierced in several places by a fork and we put it in beforehand warmed furnace (somewhere 200 degrees). In 30 – 40 minutes the pie will be ready. The dough doesn't harden some days, what is very convenient, if it is necessary to bake pie beforehand and also if someone didn't eat all at once. But usually we eat it wholly.

 

The story behind this recipe
This pie my mother prepares all my life with different stuffing. In general my mother cooks very well. Especially she manages all possible variations of pies, rolls, cookies, cakes. And I am not the best pupil because as soon as we start preparing together, everyone feels like the owner in kitchen. And I don’t like to stay and just to watch or to help a little. Therefore I usually consult on mother, but I do everything, and I try many times. She is not against and isn't angry when I spend products, because she learned to cook the same way.
Therefore a few years ago when my friend asked to help her to bake a pie, I consulted to my mother. We bought products (we forgot butter, but it didn't confuse us though the preparation was a little tightened) and we gathered on my kitchen. We cooked pie for her boyfriend who was at this time in army. We understood all responsibility of this action therefore when yeast floated in cold water and didn't want to rise, we spent lots of packs. While I rushed from the crane to a plate with yeast, my friend already mixed the necessary ingredients and kneaded dough. She liked it so much that I hardly could tear off her from this process. At last we mixed everything and put dough to rise two times. We went about our own business, sometimes checking, whether dough rose. Probably, somewhere each ten minutes. It is necessary to tell that it didn't rise. But we were unflinching. I shouldn't, probably, even say that dough didn't rise, then we put too much stuffing. Well and when in final part the pie was baked and we watched this process as some film plot sitting on stools before a plate. We solved that just in case it is worth to wait a little more. So we prepared one big cookie with boiled condensed milk. We didn't despair. And anyway her boyfriend liked it. "Well, thank God" - we told.
