Ingredients
2 medium eggplant
4 cloves garlic
1 T sesame oil
cilantro
1 t sichuan pepper corns
1 t black pepper corns
baguette
1/3 c brown sugar
1/4 c water
1/3 c chinese black vinegar
1/3 c ketchup
1 leek
1 green bell pepper
2 eggs
panko bread crumbs
oil for frying
2 T soy sauce
How to prepare this recipeDice and boil eggplant for 10 minutes. Drain and press water out with back of spoon in a strainer. Fry garlic in sesame oil until brown and add eggs, crushed black a sichuan pepper, salt to taste, eggs, and panko until it forms balls but is still moist. Slice leeks and green pepper and saute on low heat until caramelized. dissolve brown sugar in water on medium head and add ketchup, soy sauce, vinegar, and reduce until a medium thick consistency is achieved. Shape eggplant balls, roll in panko and deep fry. Assemble on sandwich: sauteed vegetables, fried eggplant balls, sauce, and cilantro. Mayo may be spread on the bread as well.
The story behind this recipeI really wanted to eat the delicious sauce that normally goes on pork, but both of my housemates became vegetarian: invention by desperation.
