Ingredients
25Grams 2 Slices Bacon
360Grams 6 slices Chicken Drumsticks
80 Grams 1 piece Onion Sliced in Wedges
40 grams 1/4 Piece Carrot Cut 1/4 6mm
40 Grams 1Rib Celery Cut 1/4" 6mm
50 grams 1/4 cup Cogran or Brandy
8 Grams 2 cloves Garlic Peeled minced
500 grams 2 cups Red wine
1000 grams 4cups Beef Stock
5 Grams 1piece Bay Leaf
1 Gram 1/2teaspoon Thyme
100 Grams 2Cups Fresh Button Mushrooms
85 Grams 18Pieces Pickled Pearl Unions
5 Grams 1Tablespoon Chopped Pearsley
20 grams 1Pc Medium Tomato Concasse
How to prepare this recipeProcedure
1. Marinate Chicken with Cognac, red wine,
onion, carrots and celery overnigth or for 8-140 hrs
2. Remove each pc of chicken from the marinate reservingthe liquid
3. Brown the chicken pcs in a fyring pan on each side
4. Set aside the chicken scoop the vegetables out of the marinate
and cook them in a garlic in the am frying pan for 5 mins until they begin to tender
5. Let the chicken brown together with the vegetables, thyme, bay leaf,
stock at the marinade in a pot under lid until tender abount 20mins
6. While the chicken is slimmering, fry the bacon in another
frying pan until it is crispy and set it aside to drain.
7. Suate the muschroom in the bacon fat over medium heat for 6-8 mins until
they turn heat for 6-8mins, until they turn tender. Reserve the mushrooms
together with the bacon
8. When the chicken has cooked for 20 mins lift out the
chicken and reserve on a tray
9. Reduce the braising liquid from the chicken until sauce like consistency.
If too thin add some slurry.
10. Strain the sauce in to a new pot
11. Add the bacon, mushroom, pearl union parsley and tomatoes.
Bring to a boil and serve over the chicken.
