Passport & Plate - Thai Style peanut sauce

Ingredients
Crunchy peanut butter (home made or shop bought)
Tamari (wheat free) soy sauce
Coconut sugar
Almond and cashew milk
Sweet Chilli sauce.
How to prepare this recipeAdd all ingredients to a pot and simmer until combined and thickened slightly.
The story behind this recipeI grew up in Darwin and loved the cultural melting pot of Asian Food it has. Moving away to other cities in Australia I found I could no longer find anywhere that made a Thai peanut sauce just the way I remembered it.
So I started experimenting and this is what I came up with. I can't have dairy and find the more authentic coconut cream normally used in this dish just doesn't sit well with my kids stomachs. So I make my own nut milk and use that.
I tried it on my extended family at Christmas time and they said it reminded them of "home". Goes great on chicken, beef, vegetables or just plain rice or noodles. When I was pregnant with my middle child it's all I wanted to eat. Peanut sauce, egg noodle and snake beans. Yum.
