Ingredients
1. 2 eggs
2. onion
3. garlic
4. 2 pieces of white bread
5. masala cheese

 

How to prepare this recipe
1. Cook onion, garlic
2. Mix with scrambled eggs and fry
3. Place omelette on 2 pieces of bread
4. Add masala cheese
5. Top with 2 pieces of bread
6. Fry until melt in your mouth delicious

 

The story behind this recipe
At 26 my dream of going to India became true. My plan was to go to the tropical paradise of Goa and up north to bask in the beauty of the Himalayas. While in Goa I was introduced to a Rajasthani folk band. I was mesmerized by the music and dancing instantly. The explosion of culture was everything I craved when dreaming of India. I started to inquire about this mysterious land and after seeing photos of Jasalmer and Johdpur I was sold and extended my stay.

After 20 hours on an overnight train that was terrifying in the beginning but oh so rewarding by the end I arrived in the desert. I was in Johdpur but I felt like I was on another planet. With gorgeous mud huts, camels and fortresses in sight I was in a complete state of wanderlust.

I arrived at my hotel completely thrilled by my surroundings, exhausted and hungry ! The owners son who was about 12 asked if I wanted him to take me to get some dinner. I said yes please. He told me he would take me to his favorite place. We scurried through alley ways with the scent of chai, spices and exotic flair filling the air.

To my surprise and delight the little boy brought me to the world famous omelette man. We sat on some plastic stools on the side of a bustling street, there were chickens to the left and cows to the right as we awaited for his glorious creations.

The omelette was served between 2 pieces of bread and eaten like a sandwich. It was sweet, moist and creamy on the inside and perfectly crispy on the outside. The masala cheese added the perfect amount of spice and a little taste of India.

It was mouthwatering delicious and I looked forward to it morning, noon and night. It is certainly my most vivid and memorable travel meal to date.

The omelette man is considered the most famous man of Johdpur, a city of one million. That is no easy feat but I can see why !
