The story behind this recipeIf you've ever been to Brasil you definetelly tried pão de queijo. If you didn't you should go and try! This is one of our main traditional snacks, specially common in the state of Minas Gerais. Extremelly appreciated by all the locals and always one of the first foods to be recomended for visitors. You can see it in any street bar in any neighbourhood. Rich or poor.
However this recipe is not the common pão de queijo you find in the streets. In fact, most of the people have no idea about it and even I didn't knew until my first backpacking trip. I was going south from São Paulo, my home town. Wandering from city to city, visiting friends, meeting tons new friends and having amazing adventures. In Porto Alegre I stayed with a cousing of mine. We haven't seen each other in years and for the weekend we decided to visit his parents in Cachoeira do Sul.
Going to there was a confort I didn't had in a long time. Okay, I was travelling for just a few weeks but for my first time backpacking it did felt much more than that. And to make things better, my aunt is an extraordinary cook. She was so happy to have us there that she would make huge amount of food so good that we would eat until explode. Even her rice was above great! Then one day she brings up this bolo de pão de queijo. I had never seen it before and I dropped my jaw when she took it ou f the oven. A giant pão de queijo! I mean, how can this go wrong? The smell, the looks, the taste... oh, the taste! he first bite felt like heaven. And the second, even the last one. So delicious... and I was amazed and I needed to learn how to do it. I would not leave there without knowing it and came asking for her to teach me. It is very simple, she said, but the secret of life lies on the simplicity.
Although I was never able to do nothing even close to what my aunt made, the recipe is very simple do be done. Anyone can do it and will be at least good. Just try it and I'm sure you will love it.
