Passport & Plate - Meethi Roti (sweet delicacy made from Wheat Flour)

Ingredients
Meethi roti (sweet delicacy made from common aata)

Ingredients

Wheat Flour 1 kg
yeast 1 tb sp
baking soda (meetha soda) 1tb sp
salt 1and a half tea sp
One cup oil
Eggs 2
Brown sugar 400 g
Anne seed (Sounf) 1 table spoon
Walnut (Akhroot) crushed half cup
Some people also add crushed coconut its optional

 

How to prepare this recipe
Method

First Step-Syrup Making
Make syrup with brown sugar in one cup water till the sugar gets dissolved on medium heat.

Second Step-Yeast Soaking
Separately soak yeast powder in Luke warm water as well for 10 minutes.

Third Step-Kneading and preparing Dow
Toss all ingredients eggs, salt, baking soda, yeast mixture, sweet brown suger syrup in wheat. Make dow by kneading with occasional use of water. It should be soft. also add walnuts to it.

Fourth Step-leave it settle.
Let it settle for 2 hours.

Fifth Step-Molding and baking
Mold it in a half inch roti (round flat Dow spread) in a dish or baking tray. Bake it on a medium temperature (for Pakistan 200 degree centigrade) for about 40 45 minutes or till it gets brown. it is a healthy delicious snack which can be used to start your day or a tea snack. It can also be served with fresh cream.

 

The story behind this recipe
For me food is a representation of culture and traditions. My mom has always loved to bake and has always been curious to create something delicious. Due to this I have relished many of the globally unique recipes. I never really appreciated her talent until i came to Pakistan as then I could not taste her delicious recipes any more. I lived in Saudi Arabia for the first 17 years of my life. Immediately after my arrival my life had taken a sudden new turn. With my parents in Saudi Arabia nothing was same. I had to be more independent, focus on my studies and day by day, the routine got tougher. My mom still used to TCS or send her prepared delicacies whenever someone traveled. She sent me this dish which was more like biscuits called Meethi Roti. Anyways I forgot about it as I had a lot on my mind. I had my exams and my health got down due to the hectic routine. I was up for the preparation of my exam suddenly I felt low and hungry. I thought about the available options and this food item was the easiest to try and have, at that moment. So I took a piece of Meethi Roti with a glass of milk at 2 am. I was blown away by the unique taste and was intrigued by the perfectness. I felt fresh and consumed rest of it during my exams either in breakfast or midnight during studying. Its tempting taste not only impressed me but it was admired by everyone who tasted it. It felt awesome to realize my mom was capable of such creative talent. it was my mom's personal invention with a fusion of eastern and western recipes. I participated in a cooking competition and asked mom to send me the recipe of most admired Meethi Roti. I believed I will win, as I had concluded that from the applause and guess what, I did. It not only took first place but also won compliments of a healthy dish by most food lovers. And this today gives me the courage to share this amazing recipe with the world through this forum. I am sure it will be liked worldwide as it holds mom's love with unique taste.
