Passport & Plate - Pierogi with raspberries

Ingredients
-125g of fresh or frozen raspberries
-3 spoons of sugar
-300g of flour
-3 spoons of water
-one egg
-200g of sour cream (18%)
-4 spoons of honey
-mint leave to decorate
How to prepare this recipeTo prepare dish you need to divide the recipe into three easy parts.
Raspberries, if frozen must be defrost with addition of sugar
Dough to prepare it put file of flour on the pastry board then add egg and appropriate amouth of water to knead dough to make it smooth.
Then roll out dough so it's 2mm thick and cut round shape bits with upsidedown glass. Put (depends on size) 2 rasberries on it and stick dough together. You could play with various patterns of sticking.
Boil water in the pot and put pierogi for 3-4 minutes to boil. You can observe that they will go gradually to the surface of water.
Meanwhile stir cream with honey with a spoon to prepare sauce.
Serve on a plate with the sauce and a mint leave which gives freshness and good look to your dish.
The story behind this recipeThere are moments when you simply miss the past. The places, people, you share with them happenings, your accitivities. But what speaks in the language that everybody understands? A smile, one could say, of course but food itself as a distinctive mixture of flavours creates regional cuisines inherited from relatives but also creates ourselves as a unique handful of tastes, a relish.
My story took major part of my life, enjoyed but not realised. This is about realisation and deeper affection and trust put into one person. Who taught me the world. Her world. My mother and her native cousine. Purely home made food which she has learned from grandma's and so on, as she was born in the country strongly preserved. She told me some about my grandma who was a polish restaurant chef and that they were always baking together, the tradition last still. Since me being small child i remember my first attempts in preparing dough rather playing than doing it properly, but my mum, she always gave some affection into it, maybe that's the secret. Pierogi, with various stuffing, were always present on our dinner table during special occasions such as Christmas, Easter or important dates. I have chosen pierogi with rasberries because they reminds me about sun, summer and our tiny back garden where we grown them.
I've migrated from Poland a few years ago and still first dish I'm asking my mum when back home is polish pierogi. Always craved, always so enjoyable!
