Traditional cuisine specialties authentic culinary in Makassar, South Sulawesi.
There are some typical foods from Makassar Indonesia are quite popular, but maybe you have not heard this one culinary. This dish is called "Pallubasa", this is a traditional food in the city of Makassar, South Sulawesi. This food is made ??from offal (entrails) beef simmered in a long time. These are materials, spices and how pembuatanya:
ingredients:
* 250 grams of cooked beef, cut into pieces
* 750 ml of boiling beef broth
* 200 grams of beef heart, cut, hard boiled
* 250 grams of boiled beef liver, cut into pieces
* 250 grams of cow intestines, boiled, cut into pieces
* 300 grams of boiled beef tripe cut into pieces
* 250 grams of beef spleen, trimmed, cut into pieces
* 50 grams shredded coconut, toasted until browned, mashed
* 1 tablespoon tamarind water

Subtle spice:

* 8 pieces of red onion
* 4 cloves garlic
* 1 teaspoon coriander
* ¼ tsp ground cumin
* 3 pieces of red pepper
* 2 cm ginger
* 3 cm galangal
* 1 stalk lemongrass
* ¼ nutmeg
* ½ cm cinnamon
* 2 pieces of cloves
* 1 tablespoon brown sugar
* ½ tablespoon of salt

How to Make:

* Saute until fragrant, put the meat, heart, liver, intestines, tripe and spleen and stir well.
* Pour the broth and cook over low heat until boiling.
* Add the toasted coconut and tamarind water, and cook until the flavors to infuse.
* Ripe ready to be served with warm rice. Good luck.
The presentation of this pallubasa served in a bowl and to complement the dish is usually eaten with pallubasa "white rice".
