Passport & Plate - Makke ki Roti and Sarso ka Saag

Ingredients
For the Sarson ka saag
1 bunch Mustard Greens
1/2 bunch Spinach Greens
1/2 bunch Bathuaa (Chenopodium) Greens
1 Tomato, 1 onion chopped
Few cloves of garlic and pieces of ginger,
Green chillies, chopped
Red Chilli Powder, salt
Home-made White Butter.

For the Makki ki Roti
Corn flour (not the one used in Chinese preparations) 1 cup
Salt, Red chilli powder, a pinch
Clarified butter / oil

 

How to prepare this recipe
To prepare the Saag (Veggies)

Clean the veggies. Then wash them thoroughly in water. In a cooker or large saucepan, combine the veggies, chopped onion, tomatoes, ginger and garlic. Add some water. Do not soak completely. These veggies have their own water. Close the pressure cooker / saucepan. Cook till 3 whistles or they are tender. Coarsely puree the veggies.

In a separate wok, heat oil, add onions and saute. Then add the coarse puree and let it simmer. Add salt.

When serving put a dollop of White butter.


To prepare the Makke ki Roti:
Knead semi-soft dough from the corn flour, salt and red chilli powder.
Either on a plastic sheet or with ur hand, roll out the rotis (bread) and transfer to a hot gridddle. Turn and apply ghee on both sides.
Serve hot.

 

The story behind this recipe
I am from India, a country with a very diverse and rich cultural heritage,be it food, customs, traditions or rituals. Travelling to any part of the country is like travelling to another land. Last year, on my annual vacation I travelled to Gurgaon, a very prominent commercial hub close to New Delhi, the capital of India. I did most of my sight-seeing in and around New Delhi. The city which was once the capital of the Mughals, is also known for its culinary delights. During one such visit to the capital, I had the priviledge to visit the Delhi Haat. Apart from it being an open-air Souk, a shopping haven, the food courts here serve delectable Regional cuisines from India.

Being December and especially windy that day and an overcast sky, I was craving something hot and spicy... A meal that i had not tasted earlier.....
Well, trying the Sarson ka saag was topmost on my agenda..... So I headed to the Food court serving Punjabi food. I placed my order for the Makke ki Roti and Sarso ka saag .................. I was excited as I was finally going to taste this much-talked about North Indian speciality .......
