Passport & Plate - Seafood Paella


Ingredients
Diced Shallots
Garlic
Thyme
Bay Leaves
2 bay leaves
White rice
white wine
salt
Chicken stock
tomato
clams
halved shrimps
Scallops
Parsley
Olive Oil
Lemon
Pepper
Spice to make it as hot as you would like

 

How to prepare this recipe
In a pan over medium heat sauté the garlic, shallots, bay leaves, pepper, salt, thyme with the olive oil then add the rice, one the rice has soaked up the oil mixture then add the white wine and chicken stock. Cook on high heat when starts to boil remove from heat and then add the tomatoes and seafood to the pan and stir. Put the pan in the oven for about 30 minutes when seafood and rice is cook. Add a bit of olive oil, parsley and lemon to taste and serve.

 

The story behind this recipe
When traveling in South America a group of us went to Valparaiso and learned to cook Paella, and had it like three meals in a row we liked it so much.
