*All organic ingredients
Chicken thighs 1/2lb Boneless, skinless
Carrots 1 to 3 (diced)
Celery 1 to 3 (diced)
Cloves of Garlic 3 to 4 (minced)
Onion (1 medium sized)
Sweet Potatoes (1-2, depends on size)
Sofrito
Chicken Stock ( as much as you like or use chicken cubes 2 to 4)
Water (depends on the size of the pot)
Salt & Pepper
Olive Oil (2 to 3 tablespoons)
Sofrito recipe:
1/4 cup of onions
1/4 cup Green Bell Peppers
1/4 cup Tomato sauce
1/4 cup cilantro
4 or 5 pieces of Ajicito peppers
3 Garlic cloves
2 Tablespoons of Recao
Add ingredients to an food processor to mix all together. When the soup is boiling, add as much as you like.
Ma's Chicken Soup Recipe:
Chop celery, carrots, onions, garlic. Add olive oil to pot. Add veggies and garlic, sauté on low to medium heat until tender. (3-5min). Don't brown the veggies. In the same pot, cook the chicken until seared on both sides, lightly brown. Cut them into little pieces or leave them whole. Sprinkle seasoning on chicken (salt/pepper).
Add water to the pot. Cube the sweet potatoes and throw them in. Add chicken stock or chicken cubes. Add sofrito, let soup boil for 15-20 min.
Why I should win Passport & Plate:
When I was little my mom always made this soup when my brother and I were sick. There is so much love that is put into this soup that you always feel better after eating it. As I was laying in bed sick, the aromas of the veggies and garlic fill up the house and you feel comforted.
My mom is Italian and garlic is always a staple in our recipes especially this one. The garlic is a natural anti-biotic and it works wonders. I love this soup because when I'm missing my mom, I'm feeling sick, or just feel like having that comforted feeling I make her soup. No matter where I am in the world, I will always have a piece of home and my mom with me.

I always felt a strong connection with my Italian side of the family. I always wanted to know where I came from and where my family lived. I decided to research and found out that my family is from Palermo, Sicily. My great grandfather came to the United States when he was a young boy, didn't know how to write or speak the language that well. I'm so grateful for him to bravely come to this country and allow the traditions to be passed down to me.
I recently found out that I'm able to become an Italian Citizen because of my great grandfather. Its been 3 years of research and waiting. I want to go to Italy to see how cooking is done in Italy. I want to experience the love in the kitchen.
