One day I pondered the lack of cheese in Chinese cooking, and, not knowing it was a laugh line, I asked my friend Chen, "What does China do with all its leftover milk?"
She said, "We have 1.3 billion people. There is no leftover milk."
Not satisfied with her answer--no one drinks milk either--I have uncovered the dirty little secret of China's milk:
Milk Melons
More than 500 kg of "milk watermelons" are available at Beijing markets now. Watered with milk, the pulp of these melons is sweeter than the ordinary ones. The milk watermelons are sold at 24 yuan per kg, 4 yuan higher than the regular watermelons.
